The fresh green chillies are first sun-dried and then blended with citrus fruit extract and then further cooked with local spices to form a paste. This spicy but addictive chutney is usually eaten as a dip with roti, rice and even evening snacks and is also used in cooking to give that extra punch to curry recipes. It can be added to sprout salad, or sandwiches to enhance the flavour of dishes.
